Mix the watermelon (keep a few cubes apart for the garnish), tomatoes, cucumber, garlic, red pepper, balsamic vinegar, basil, olive oil and 50 ml water in a blender to a smooth soup.

Season with salt and pepper and leave in the fridge for at least 2 hours.

Serve the soup in glasses with the remaining watermelon cubes and sprinkle some feta.
