Boil the pasta according to the instructions on the package, drain and keep a cup of the cooking water.

Grind in a food processor the pulp of the avocados with the goat's cheese, basil, parsley, garlic and olive oil into a creamy sauce. Add some of the cooking water and season with salt and pepper.

Stir the sauce through the penne and warm briefly. Garné possibly with some extra green herbs and extra crumbled goat's cheese.
