Spicy pancake with tomato and salami

Add half of the milk to the pancake mix and mix until smooth. Add the rest of the milk and the eggs while stirring.

Mix the tomato, salami and herbs through the batter and puree with a hand blender.

Heat a knob of butter in a frying pan, scoop a thin layer of batter into the pan and bake until the top is almost dry. Turn the pancake over and bake for about 1 minute.

Brush the pancakes on one side thinly with pesto, roll them up and cut into rolls. Stick with a stick.
