Spicy potato salad
Vegetarian dish with potatoes, shallots, parsley, thyme leaves, chives, Greek yogurt and mayonnaise.

Cut the potatoes into slices of about 1/2 cm and cook for 12-15 minutes until done.

Chop the shallot. Slice the parsley and chives.

Meanwhile, mix the shallot with the parsley, thyme leaves, chives, Greek yogurt and the mayonnaise. Season with salt and pepper.

Spoon the dressing through the warm potatoes and let them cool down at room temperature.

Keep the cooled potato salad covered in the refrigerator until use.
