Heat the oil in a non-stick pan. Add the cumin, turmeric, cinnamon and cayenne pepper and cook for 1 min on low heat.

Add the almonds and cook for 4 minutes. Season with pepper and salt. Change regularly.

Remove the pan from the heat and allow the seasoned almonds to cool for 30 minutes on kitchen paper.
