Boil the vinegar with the sugar until the sugar has dissolved and place the carrot in it. Allow to cool completely.

Preheat the oven to 180ºC. In the meantime, heat the oil and fry the prawns with the red pepper and garlic for about 3 minutes.

Spread the edges of the baguette with the mayonnaise and bake in the oven for about 6 minutes until golden brown. Cover one side of the baguette with shrimps, green herbs and pickled carrot.

Cover with the cheese. Roast the covered side of the baguette for another 5 minutes in the oven until the cheese has melted.

Place the other side of the baguette on top, cut into pieces and serve with the chili sauce.
