Beat the eggs with the milk, cream or crème fraîche and season with salt and freshly ground pepper.

Cut the short cooked green or white asparagus into small pieces and scoop them with the goat's cheese through the egg.

Heat the oil or liquid baking product in a large frying pan and pour in the mixture.

Leave to cook on the pan at medium height with the lid.

Turn the omelette over with the lid and bake the other side for a few more minutes.

Cut the omelet into points. Tasty with toast and butter.
