Spicy spaghetti with salmon

Chop the onion, finely chop the garlic and the red pepper without seeds. Finely chop the oregano.

Heat the olive oil in a skillet and gently fry the onion and garlic with the red pepper in 3-4 minutes. In the meantime, cook in a pan with plenty of boiling water with a little salt, the spaghetti al dente in 10-12 minutes.

Cut the tomatoes into pieces and stir with half of the oregano through the onion mixture. Let the tomatoes simmer for 6-8 minutes until it becomes a sauce. Add salt and pepper to taste.

Cut the salmon into cubes and cut the skin off as desired. Stir in 1 tablespoon of pasta cooking liquid through the tomato sauce and also spoon in the salmon cubes. Let it simmer for 2-3 minutes until the salmon is just done.

Drain the spaghetti and stir the pasta through the sauce. Serve in deep plates and garnish with wafer-thin slices of Parmesan cheese and oregano.
