Spicy spelled with Mediterranean ratatouille


Homemade ratatouille of onions, garlic, zucchini, eggplant, tomatoes, herbs and tomato sauce. Served with spelled and mint.

Directions

  1. Chop the onion and finely chop the garlic. Cut the zucchini and eggplant into 1½ cm pieces. Cut the tomatoes into pieces.
  2. Heat the oil in a frying pan and fry the onion and Provençal herbs for 2 minutes on medium heat. Add the garlic and cook for 1 min.
  3. Add the zucchini and eggplant and cook for 5 min.
  4. Turn down the heat and add the tomato, tomato cubes and vinegar.
  5. Leave to simmer for 35 minutes with the lid on the pan over low heat. Season with pepper. Stir frequently.
  6. Meanwhile prepare the spelled according to the instructions on the package.
  7. Meanwhile, clean the lemon, grate the yellow skin and cut the flesh into pieces. Cut the parsley and fresh mint fine.
  8. Mix the spelled with the rest of the oil, half the parsley, the fresh mint and ½ tsp lemon zest (per 2 people).
  9. Serve the spelled with the ratatouille. Garnish with a lemon wedge and the rest of the parsley.
