Spicy vegetable curry with spices and pineapple

Heat the coconut oil and fry the chopped onion.

Add the cloves, star anise, ginger, garlic and curry. Fruit for a minute on low setting.

Add the carrots, potatoes, peppers and tomatoes and stir fry for a few minutes.

Add the coconut cream and enough broth that the vegetables are just below.

Bring to the boil and leave to simmer for about 15 minutes with lid on the pan.

Leave the sauce to cook for 5 minutes without the lid and then season with salt and pepper.

Spoon the pineapple through the vegetables and sprinkle the dish with the coriander at the last minute.
