Directions

  1. Preheat the oven to 200 ° C. Place the slices of puff pastry with gaps on the baking sheet and brush them with egg. Bake the dough in the oven in 8-10 minutes until golden brown.
  2. Poach the eggs one by one.
  3. Heat half of the olive oil in a stirring stir-fry the spinach very briefly until the leaves are slightly shrunken. Season with salt and pepper.
  4. Heat the poached eggs in a pan of hot (not boiling) water for 1 minute.
  5. Place the puff pastry slices on plates and spread the spinach over them. Put the poached eggs and some anchovies on them. Drizzle with the rest of the olive oil.
