Spinach gratin with mashed potatoes and sauces

Preheat the oven to 180ºC. Cook the potatoes in water with salt for about 20 minutes.

Blanch the spinach for 2 minutes. Drain, rinse under cold water and drain well into a sieve. Press the moisture out well with the convex side of a spoon.

Beat the eggs with salt and pepper and mix in the cheese. Finely chop the spinach and mix it through the egg mixture. Put this in the baking dish and place in the middle of the oven for about 25 minutes until the egg mixture has solidified.

Sprinkle the sausages with salt and pepper and prick them with a fork. Heat the baking product and fry the sausages in about 15 minutes until golden brown and done.

In the meantime, pour the potatoes and mix with the milk, butter, nutmeg, salt and pepper an airy puree.

Serve the mashed potatoes with the spinach gratin and the sausages.
