Spinach pancakes with bacon and syrup

Drain the spinach in a ball sieve and push out as much moisture as possible with the convex side of a spoon.

Mix in a bowl the spelled flour, baking powder and a little salt. Beat the eggs through the buttermilk and pour the mixture while stirring with a whisk to the flour mixture, to create a smooth batter. Add the spinach and beat through it.

Heat a skillet without oil or butter and bake 3 slices of bacon for 1 minute. Turn around and scoop up a pile on each slice. Bake the pancakes in 4 minutes until golden brown. Turn after 3 minutes.

Spoon the pancakes on a plate and keep warm under aluminum foil or a lid. Bake 3 pancakes for everyone. Serve with the syrup.
