Directions

  1. Heat the oil in a deep pan with a thick bottom and place the corn grains. Put the lid on the pan, set the heat source high and let the popcorn pop in a few minutes. Meanwhile shake the pan a few times. Stay there and leave the lid on the pan as long as the corn pops.
  2. Roast the kernels in a dry hot frying pan.
  3. For the dressing, finely chop 2 blackberries and beat the vinegar, honey and mustard and then gradually pour the oil through. Season with salt and pepper.
  4. Put the spinach and onion rings in a large bowl and pour the dressing through.
  5. Spread the puffed corn, roasted kernels, forest fruit and cheese over the salad. Grind a little pepper and serve immediately.
