Spinach salad with goat cheese packets

Preheat the oven to 200ºC.

Cut the sheets of filo pastry in half.

Melt the butter and brush the 8 pieces of filo pastry.

Spread the goat cheese, thyme and honey over the bottom of each piece of filo pastry.

Fold the corners of the dough up and close in the form of a pouch.

Brush the packets with some melted butter and bake in the oven in about 20 minutes until golden brown.

Beat a dressing of the oil, mustard and vinegar and season with salt and pepper.

Spread the spinach leaves over a bowl, scrape ribbons of the carrots and pour the dressing over them.

Allow the goat cheese packets to cool for a few minutes and place them on the salad.
