Heat the oil and fry the onion and thyme for about 10 minutes on low until the onion is soft and light brown.

Add the flour and stir until it comes loose from the bottom.

Add the stock in portions and bring it to the boil while stirring.

Add the spinach and allow it to shrink. Puree the soup and season to taste with pepper and nutmeg.

Garnish with green herbs if necessary. Serve directly with the cheese.
