Ingredients
- 2 tablespoon peanut oil
- 2 tablespoon sunflower oil
- 1 Red onion shredded
- 2 clove garlic
- 300 gram fresh spinach ready to cook
- 600 milliliters vegetable stock
- 600 milliliters herbal broth
- 400 milliliters coconut milk tin can, package
- 150 gram
- 2 tablespoon fresh coriander minced meat
- 1 teaspoon Tabasco

Directions

Heat the oil in a soup pot. Fry the onion and the garlic in this and add the spinach and let it shrink by leaping.

Pour in the stock and coconut milk (add 250 ml of hot water if you use) and bring the soup to the boil.

Stir 1 tablespoon of coriander through the soup and add the tabasco.

Puree the soup and put it in warm bowls. Sprinkle the rest of the coriander over it.
