Spring chicken soup


A tasty Dutch recipe. The main course contains the following ingredients: poultry, yellow rice (a 325 g), lemon (cleaned), chicken broth (from tablets), chicken breast (in strips), carrots (in slices), sugar snaps (or snow peas), spring onions (in pieces of 2 cm) and ready-to-cook spinach (300 g).

Directions

  1. Boil the rice according to the instructions on the package.
  2. Grate the yellow skin of the lemon and squeeze out the fruit.
  3. Bring the stock in a large saucepan with the lemon zest and 2 tablespoons of lemon juice to the boil.
  4. Add the chicken, carrot, sugarsnaps (or snow peas) and spring onions, and let the soup simmer for 10 minutes.
  5. Stir the spinach through the soup and let the leaves shrink slightly.
  6. Season the soup spicy with salt, (freshly ground) pepper and possibly some lemon juice.
  7. 4 Put a quarter of the rice in a cup, press it well and turn the rice on top of a large deep plate.
  8. Spoon the chicken soup with vegetables around it..
