Sprout salad with chicken, walnuts and grapes

Halve the grapes.

Cut the sprout of the sprouts and halve the sprouts.

Boil the sprouts in a pan with plenty of boiling water with a little salt in ten minutes al dente.

Rinse the sprouts in a colander with cold running water and let them drain well.

Roll out the chicken fillets and sprinkle with salt.

Heat the olive oil in a suitable frying pan and fry the fillets on medium heat, with the lid ajar.

After ten minutes, reduce the heat and cook for another five minutes.

Beat in a bowl of orange juice with walnut oil, mustard, salt and freshly ground pepper to make a dressing.

Cut the chicken fillet into small pieces.

Spoon the chicken, sprouts, arugula, grapes and walnuts through the dressing.
