A tasty Dutch recipe. The vegetarian side dish contains the following ingredients: vegetable stock (from tablet), leeks, olive oil, lemon juice (fresh or from bottle), Groninger mustard (or other coarse mustard), dried tarragon, soft goat's cheese ((eg Bettine Blanc) and sliced ).

Bring the broth to the boil. Cut the leeks into pieces of 5 centimeters. Wash them carefully so that there are no longer any grains of sand. Cook the leeks in 10 minutes al dente.

Beat a thick vinaigrette of the oil with the lemon juice, the mustard and the tarragon and dilute this vinaigrette with 4-5 tablespoons of the vegetable stock. Season with salt.

Remove the pieces of leek from the pan with a skimmer and transfer them to a container. Pour the vinaigrette over and let the leeks cool for 30 minutes. Remove the leeks from the vinaigrette (keep the vinaigrette), place the pieces on a dish and spread the cheese over them. Drop some vinaigrette over it.
