Steak with bearnaise sauce and oven fries
Classic combi of steak, homemade bearnaise sauce, fresh salad and fries with rosemary.

Preheat the oven to 200 ° C.

Let the steak come to room temperature. Mix the fries with the rosemary and oil and spread over a griddle covered with parchment paper.

Bake in the middle of the oven in about 30 minutes until golden brown and crispy. Spoon halfway. If necessary, season with salt.

Meanwhile, wash the tomatoes and cut each into 8 parts. Wash the cucumber, cut in half lengthwise and cut into thin slices.

Mix the lettuce with the vinaigrette, tomatoes, cucumber and croutons. Season with pepper and salt.

Sprinkle the meat with salt and pepper. Heat the butter in a large frying pan and fry the steaks in 5 minutes on a high heat medium.

Turn halfway. Turn the heat down, remove the meat from the pan and let it rest on a plate under a lid or aluminum foil.

Add the creme fraiche, tarragon, mustard and 100 ml water to the remaining shortening and heat for 2 min on medium heat.

Season with pepper and salt.

Serve the steak with the bearnaise sauce, fries and the fresh salad.
