Steak with crayfish and red wine sauce

Take the meat out of the fridge 30 minutes in advance and let it warm up.

In the meantime, prepare the sauce. Heat the oil and fry the shallot for about 4 minutes.

Add the garlic and thyme and fruit for another minute.

Deglaze with the wine and simmer for about 3 minutes.

Add the fond and let the whole reduce to half of it on medium to high level.

Heat 4 plates, for example in a hot oven. Dab the meat dry and sprinkle with salt and pepper.

Heat the butter for the meat in a frying pan and fry the steaks on both sides in about 5 minutes of rosé. Add the crayfish the last minute.

Assemble the sauce with small cubes of cold butter by stirring the warm wine sauce. Put a spoon of the sauce on the plates and put the meat and the crayfish on it.

Tasty with haricots verts or green asparagus.
