Directions

  1. Sprinkle the meat with the flour. Shake off the excess flour.
  2. Let the oil and the butter become hot in a frying pan and fry the meat golden brown.
  3. Chop the onion and scoop together with the bacon cubes and let them fry until the bacon turns light brown.
  4. Crush the juniper berries with the convex side of a spoon and add with the cloves and bay leaf. Season with (freshly ground) salt and pepper.
  5. Pour the red wine with the meat in the pan and stir well.
  6. Place the lid on the pan and let the meat simmer for about 2 ½ hours on a low heat. Stir the meat regularly to avoid burning.
  7. When the moisture evaporates too much and the meat is not yet tender, add some water.
  8. Cut the gingerbread into dice and scoop the meat in the pan and let it simmer for another half an hour.
  9. Preheat the oven to 250 ° C.
  10. Grease the oven dish with butter. Spoon the stew with all ingredients and the cooking liquid into the dish and cover with a layer of mashed potatoes.
  11. Peel the apple and cut into rings and cover the puree with the apple. Crumble the biscuit and sprinkle the apple with it.
  12. Place the hunting dish in the oven for about 15 minutes until the top is golden brown.
