Let the steak come to room temperature and pat the meat dry with kitchen paper.

Heat a frying pan with a thick bottom on high heat. Melt the butter in the pan and wait until the foam has left.

Fry the steak in 1 min. On both sides on high heat.

Fry the meat over medium heat for another 2-6 minutes, depending on how well you want it. Times regularly.

Place the steak on a lukewarm plate and let it rest for a few minutes (under aluminum foil).

Stir the broth or milk through the shortening and bring it to the boil while stirring. Let it reduce to a tasty gravy.

Sprinkle the steak with salt and pepper and serve with the gravy.
