Directions

  1. Let the steak come to room temperature and pat the meat dry with kitchen paper.
  2. Heat a frying pan with a thick bottom on high heat. Melt the butter in the pan and wait until the foam has left.
  3. Fry the steak in 1 min. On both sides on high heat.
  4. Fry the meat over medium heat for another 2-6 minutes, depending on how well you want it. Times regularly.
  5. Place the steak on a lukewarm plate and let it rest for a few minutes (under aluminum foil).
  6. Stir the broth or milk through the shortening and bring it to the boil while stirring. Let it reduce to a tasty gravy.
  7. Sprinkle the steak with salt and pepper and serve with the gravy.
  8. Cut the steak transversely to the thread of the meat, so the steak feels more tender.
