Peel the potatoes and cut them into pieces. Cook them together with the stew vegetables for 15 minutes.

Heat the smoked sausage according to the instructions on the packaging.

Chop the shallots and fry them in the butter.

Stir in the mustard and stock and heat.

Heat the milk. Drain the potatoes and the vegetables and crush them coarsely, pour the milk and stir puree.

Season with salt and pepper. Serve with the vegetarian sausage and the mustard gravy.
