Heat the olive oil and fry the pieces of leek, garlic and dried thyme on a low setting for a few minutes.

Stir in the tomato puree and go through and fry for a few minutes. Quench the wine and bring everything to the boil.

Turn the heat source down and simmer for about 20 minutes without lid on the pan. Season with salt and pepper. Garnish with some sprigs of thyme.
