Stuffed zucchini with goat's cheese and tomato sauce
Zucchini from the oven filled with goat cheese and a tasty tomato sauce over it.

Preheat the oven to 200 ºC.

Boil the rice according to the instructions on the package.

Chop the onion. Wash the courgettes, remove the ends and halve. Hollow out the courgettes (seed lists are not used).

Cut the crusts of the bread and crumble (possibly in a food processor).

Prepare the breadcrumbs, thyme and half of the onions with a fork through the goat's cheese. Season the mixture with pepper and salt.

Fill the zucchini with the goat cheese mixture and press firmly.

Line a baking sheet with baking paper. Fry the zucchini on the baking sheet in the oven for 30 minutes until done.

In the meantime, heat the tomatoes with the oil and season with salt and pepper.

Divide the rice over the plates and pour the tomato sauce over it. Place the zucchini next to it.
