Summer macaroni salad with mango and curry dressing

Directions

  1. Squeeze the lemon.
  2. Cook the macaroni according to the instructions on the package.
  3. Rinse the macaroni with cold water and allow to cool.
  4. Clean the lettuce and cut it first in quarters and then in fine strings.
  5. Wash and dry the arugula if necessary.
  6. Cut the chicken into small cubes.
  7. Wash the blue berries carefully.
  8. Peel the mango and cut it into cubes.
  9. Roast the walnuts in a dry frying pan.
  10. Chop the herbs and cut the spring onion into thin rings (only the white).
  11. Mix all ingredients together, but save some chopped herbs and nuts for garnishing.
  12. For the sauce, mix the mayonnaise with creme fraiche and the curry.
  13. Season with salt and pepper and a dash of ginger syrup.
  14. If you want it a bit more acidic, add the lemon juice.
  15. Only mix the sauce with the salad if you serve it or serve the salad and the sauce separately.
  16. Serve with baguette and some cheeses.
