Ingredients
- 100 gram Sushi rice
- 100 gram risotto rice
- 1 teaspoon sugar
- 1 tablespoon White wine vinegar
- 1 tablespoon Japanese rice vinegar
- 100 gram smoked salmon
- 100 gram smoked mackerel fillet
- 100 gram smoked trout fillet
- 100 gram smoked herring
- 1 spring / forest onion in wafer thin rings
- 2 boom chives

Directions

Put the rice on with 300 ml of water and a pinch of salt and bring to the boil. Allow to cook slowly for about 20 minutes at low speed until all the water has been absorbed and the rice is cooked.

Transfer the rice to a bowl and stir in the sugar and vinegar. Allow the rice to cover with cooling foil to cool.

Wet hands and shape the rice into small elongated balls.

Place them on a dish and cover them with cling film. Let it stiffen in the refrigerator for half an hour.

Cut the fish into equal pieces and place them on the rice balls.

Sprinkle the sushi with spring onions, garnish with chives and serve immediately.
