Sushi sandwich with smoked fish

Cook the sushi rice according to the instructions and stir in the vinegar. Spoon the rice and let it cool.

Cut the lettuce and half of the radishes into wafer thin strips. Spread 2 half sheets and spread over each sheet a layer of rice of 2 cm thick, the sheets should be completely covered with rice. Press well and brush the rice thinly with wasabi. Then divide thin strips, radish, sushi ginger and pieces of fish over the sushi sheets with rice.

Put one covered nori-sheet on the other and cover with a half nori-sheet (the last half sheet is not used). Press well and cut the sushi sandwich with a razor-sharp knife in half. Cut the halves diagonally. Pack each sandwich tightly in plastic wrap and store in the refrigerator until use.

Put 1-2 sushi sandwiches per person in a to go box. Fill compartments with extra radishes and some sushi ginger. Pour the soy sauce in a small container and put it in the to go box.
