Blanch the cauliflower florets for 2-3 minutes, drain and keep separate.

Heat the vinegar with 200 ml of water and the sugar until the sugar is dissolved.

Add the turmeric (kungit), star anise, cinnamon, curry, ginger and the cauliflower florets.

Put this mixture in clean pots with lid and store in the refrigerator for up to 3 weeks. Tasty with oriental dishes.
