Fried chicory with mushrooms and tarragon
Chicory with chestnut mushrooms, tarragon and walnut oil.

Cut the bottom of the chicory and remove the hard core with a sharp knife. Remove the leaves.

Cut the mushrooms into quarters. Squeeze out the lemon.

Heat the walnut oil in a stir frying pan the chicory leaves on low heat in 10 min. Golden brown and soft.

In the meantime, heat the oil in a frying pan and fry the mushrooms over a high heat in 5 min. Brown and done.

Add the lemon juice. Sprinkle with pepper, salt and the tarragon. Mix through the chicory and serve.
