Sweet carrot-nut balls from simone grent
A nice Turkish recipe. The vegetarian snack contains the following ingredients: winter carrot (peeled and grated), sugar, walnuts ((a 50 g), minced meat), butter, vanilla sugar, lemon juice, biscuits (eg almond cookies 300 g), in pieces) and coconut (grinded).

Put the winter carrot with the sugar in a pan with a thick bottom, stir well and let it cook on a low heat until all the moisture has disappeared (about 25 minutes).

Roast the walnuts in a dry frying pan and let them cool. Take the pan with carrot from the heat and melt the butter in the warm root mixture. Stir first the vanilla sugar and lemon rind and finally the roasted walnuts and biscuits.

Sprinkle the coconut on a plate. Roll small balls (about 2-3 cm diameter) of the carrot-nut mixture and roll them through the coconut. Allow the carrot balls to set in the refrigerator for 2 hours.
