Sweet egg flakes
A tasty French recipe. The vegetarian dessert contains the following ingredients: lemon (scrubbed), butter, eggs (split), floral honey, vanilla sugar (pack of 10 bags), wheat flour (sifted), milk (lukewarm), powdered sugar (extra for garnish), ricotta cheese (fresh cheese and 250 g).

Grate the yellow skin of the lemon and squeeze out the fruit. Melt 50 g of butter in a saucepan. Beat the egg yolks with the honey and vanilla sugar light yellow and airy. Add the flour, milk, grater and melted butter. Mix until smooth.

Mix 5 tbsp lemon juice and 4 tbsp icing sugar with the ricotta. Store in the refrigerator until use.

Beat the proteins with a pinch of salt stiff in a fat-free bowl, spat this through the batter. Heat a knob of butter in a frying pan with non-stick coating. When the butter is no longer bubbling, add the batter with a large serving spoon and spread evenly over the bottom of the pan. Turn the flange once the batter has solidified. Continue until the batter is finished; it is sufficient for 8-10 pancakes. Fold the flanges double and then double again and spread over 4 plates. Sprinkle lightly with icing sugar and serve with the lemon ricotta.
