Sweet foam omelette made from eggs, lime, sugar, caster sugar and icing sugar with blackberries, blueberries and mint.

Preheat the oven to 200 ° C.

Let the blackberries drain. Split the eggs over a large, fat-free bowl. Put 3 egg yolks in another large bowl. The fourth is not used.

Grate the green skin of the lime. Add the rasp with the sugar to the egg yolks and beat with a mixer in 10 min. Light and airy.

Clean the whisks of the mixer well and whisk the egg whites. Add the caster sugar and whisk until the egg white shines and forms peaks.

Spatefully spread the protein through the egg yolk mixture.

Sprinkle the bottom of the mold with half of the icing sugar. Spoon the egg mixture evenly. Sprinkle with the rest of the icing sugar.

Bake the omelette in the middle of the oven in about 15 minutes until golden brown. Divide the blackberries and berries and garnish with the mint. Serve immediately. Yummy! .
