Sweet mashed potatoes with sage and coarse Zaanse mustard.

Peel the potatoes and cut into pieces. Boil in water with salt in 20 min. Until done.

Meanwhile cut the sage leaves into strips. Heat the oil in a saucepan and fry the sage on low heat. Heat the milk.

Drain the potatoes and grate them coarsely with the puree masher.

Mix in the milk, herb oil and mustard. Cut the chives into pieces and stir through the puree.

Heat the apple syrup briefly in the microwave until it is liquid. Garnish the puree with thin lines of syrup that you let run from a spoon.
