Sweet potato and fig
oven dish with sweet potato, spring onion, figs and bacon.
Preheat the oven to 200 ° C.
Peel the sweet potatoes and cut into pieces of 2 x 2 cm. Halve the red pepper in the length, remove the seeds and cut the flesh finely.
Mix the potato in the baking dish with the red pepper, rosemary, oil and the bacon.
Bake in the middle of the oven for about 40 minutes. Spoon halfway.
Meanwhile, cut the figs into wedges and divide the potatoes halfway through the baking time.
Cut the spring onion into rings and sprinkle over the dish.
