Sweet potato stew with apple and sauerkraut

Mix the Italian herbs with olive oil, balsamic vinegar, salt and pepper. Brush the pork chops on both sides.

Boil the sweet and crumbly potatoes in plenty of water with some salt until done. Drain and let steam.

Meanwhile, heat 1 tablespoon of butter in a frying pan and gently fry the onion with the rosemary in about 4 minutes. Add the garlic and apple pieces and stir-fry for 1 minute. Spoon the sauerkraut and warm with the lid on the pan for about 10 minutes.

In the meantime, heat a grill pan and grill the pork chops on both sides in 5-7 minutes until tender and brown.

Mash the potatoes with 1 tablespoon of butter. Season the sauerkraut with pepper. Place the pork chops on the potato stew and serve with the sauerkraut.
