Sweet potato stew with arugula and quibbling
Sweet and ordinary potatoes, crunchy quibbling, arugula and garlic mayonnaise.
Peel and cut the sweet and crumbly potatoes into equal pieces and cook them in water with salt, if necessary, for 15 minutes.
Drain and keep a cup of cooking liquid.
Meanwhile, squeeze the garlic and mix with the mayonnaise and the water.
Heat the oil in a frying pan and fry the browning in about 6 minutes until golden brown and done. Turn halfway.
Meanwhile pour the potatoes and keep a cup of cooking liquid. Stamp the potatoes to a coarse puree.
Add some cooking liquid. Put the arugula through it.
Divide the stew and squabbling over the plates. Sprinkle with garlic mayonnaise.
