Sweet potato tartlets with red onion and sage
Preheat the oven to 200ºC and grease the cake molds. Cook the potato cubes for 3 minutes.
Drain and rinse cold water. Let it drain well.
Beat the eggs with salt and pepper. Put half of the cheese, chopped sage, sweet potato and onion rings through.
Line the molds with the dough and spread the potato mixture over it. Sprinkle with the rest of the cheese and put a leaf of sage on it.
Bake the tarts in the middle of the oven in 20-22 minutes until golden brown and done. Tasty with a green salad.
