Rainbow vegetables
A nice Mediterranean recipe. The vegetarian side dish contains the following ingredients: eggplant, zucchini, peppers (red yellow or both colors), garlic, coarse sea salt, chili pepper and olive oil.

Preheat the oven to 200 degrees.

Cut the aubergine into small cubes. Do the same with the zucchini.

Cut the peppers in half. Pull off the stem, and cut out the white with the seeds. Then cut the peppers into pieces.

Put everything in the baking dish. Peel the skins of the garlic and cut the garlic into super thin slices.

Put the garlic in the oven dish and add the sea salt and a tiny chilli pepper.

Pour 4 tablespoons of olive oil and mix with a large spoon. Put the baking dish in the oven for 40 minutes. And turn the vegetables occasionally.

At the end you prick the vegetables with a fork. If they are soft, remove them from the oven. Eat them nice with potatoes.
