Clean the onion and cut into large pieces.

Break the Bastogne cake fine.

Fry the onion in the pan with a little oil.

When the onion is translucent, the fire low and the basil leaves.

Glance tomatoes, stock and Bastogne cakes simmer, about 10 minutes on very low heat.

In the meantime, clean the mango and mix it with the hand blender together with the crème fraîche.

Mix with the hand blender half the tomato juice in the stock, then stir in the other half of the tomato juice.

Divide this over the soup bowls and serve with the mango puree.
