Zucchini Soup With Salmon
Tasty appetizer! This homemade soup of courgette with smoked salmon.

Chop the onion and cut the courgettes into cubes.

Heat the oil in a large (soup) pan and fry the onion in the oil until it looks glassy.

Stir in the zucchini and cook for 3 minutes on a high heat. Stir frequently.

Pour in the chicken broth, bring it to the boil and let the zucchini gently simmer for 10 minutes.

Purée the soup with the hand blender or in a food processor. Stir in the whipped cream and season the soup with salt and pepper.

Spoon the soup into deep plates and spread the salmon slices over it.
