Cold cucumber soup
A tasty Dutch recipe. The starter contains the following ingredients: poultry, spring onions, cucumber, olive oil, garlic, chicken stock, dry white wine, crème fraiche (125 ml), salt, pepper and mint.

Clean the forest onions and cut them into fine rings. Peel cucumber and cut into small cubes. Heat oil in (soup) pan and gently smother the spring onion. Peel the garlic and press it over it. Add cucumber cubes, bouillon tablet, wine and 1/2 liter of water. Bring the soup to the boil and cook for approx. 15 minutes covered. Allow the soup to cool down and then let it cool down in about 1 hour.

cut fresh mint finely. Puree soup in food processor or with hand blender. Stir in the crème fraîche and season with salt, pepper and mint. Take a soup in a cool box.
