Cook the tagliatelle.

Grind the pulp of the avocados in a food processor and add the Parmesan cheese, basil, garlic, half of the lemon juice and half of the lemon zest.

Grind to a smooth mixture and add the oil.

Season with salt and pepper.

Drain the pasta (keep a little bit of cooking liquid) and pour back into the hot pan.

Stir the avocado sauce through the tagliatelle.

Add some of the cooking liquid to make it creamier.

Add the spinach in small portions and let it shrink through the warm pasta.

Scoop the smoked salmon, spring onions and lemon zest.

Season to taste with extra lemon juice, basil and Parmesan cheese.
