Spicy halloween burgers
A tasty recipe. The vegetarian main course contains the following ingredients: pumpkin, hazelnuts (55 g), wholemeal bread, mild Indian curry paste, fresh coriander (or parsley (15 g), finely chopped), eggs (whipped) and oil.

Halve the pumpkin, remove the seeds, divide them into slices and cut off the skin.

Grate the pumpkin roughly with a grater or in the food processor and put it in a bowl.

Roast the hazelnuts in a dry frying pan over medium heat until golden and then finely chop them in the food processor or in the mortar.

Add the bread and crumble it in the food processor or by hand.

Stir in the curry paste, 1 teaspoon of salt and the coriander.

Spoon the bread mixture with the grated pumpkin and add the eggs.

Mix everything and knead well.

Let the pumpkin mixture rest in the fridge for 30 minutes.

Divide the pumpkin mixture into 8 portions and shape them into burgers.

Heat the oil in a frying pan and fry the burgers over medium-high heat for 10-12 minutes, turning the burgers regularly.

Tasty on a bun, with red onion rings and lettuce or with stir-fried leeks and multigrain rice..
