Heat the oil in a tajine dish or stew pan with a thick bottom. Fry the onion rings for a few minutes and add the carrot, garlic and cauliflower.

Add the broth and the spices and let the vegetables stew to the lowest setting in about 20 minutes without stirring.

In the meantime, prepare the couscous according to the instructions on the packaging.

Season the vegetables with salt and pepper and serve with the couscous, possibly topped with green herbs.
