Tagliatelle with carrot, lemon and goat cheese
Italian pasta dish with carrot, lemon and soft goat's cheese.

Peel the winter carrot. Scrape as long as possible thin slices of the carrot with a peeler.

Clean the lemon and grate the yellow skin. Halve the fruit and press out half.

Heat the oil in a skillet and add the lemon zest. Remove the pan from the heat and leave for 2 minutes.

Cook the tagliatelle according to the instructions on the packaging. Boil the winter carrot for the last 2 minutes. Drain and put back in the pan.

Put the pan with oil back on the fire. Carefully pour some cooking liquid from the pasta into the pan with lemon oil.

Stir in the lemon oil, lemon juice, pepper and possibly salt through the pasta.

Slice the coriander and crumble the goat's cheese. Spread the pasta over the plates and sprinkle with the coriander and goat cheese.
