In a large soup pot, bring the tomatoes, coconut milk, water, curry paste, fish sauce and bouillon tablets to the boil.

Stir frequently and cook gently for 3 minutes.

Cut the spring onions into rings. Stir the shrimp through the soup and heat for another 1 min.

Garnish the soup with the spring onion. Serve with the baguette.
