Lollipops of lemon, coconut grater, oatmeal, chickpeas, dates and maple syrup dipped in chocolate with a topping of goji berry, pistachio and cacao nibs.

Clean the lemon and grate the yellow skin of the fruit. Halve the lemon and squeeze half of the fruit.

Pitted the dates.

Put 1 tbsp lemon juice and 2 tbsp lemon zest per lemon together with the oatmeal, the coconut grater, chickpeas, dates, maple syrup, the salt and water in a mixing bowl.

Puree with a hand blender or in a food processor until smooth.

Roll the mixture with your hands into a ball per portion. Roll through the rest of the coconut and put in the freezer for 30 minutes.

Melt the chocolate 5 minutes before removing the balls from the freezer, au bain-marie. Chop the pistachio nuts.

Remove the balls from the freezer and press them flat with a spoon. Put the sticks in the balls.

Dip the lollipops on one side in the chocolate and immediately sprinkle the pistachio (or other topping) over it so that it sticks.

Because the balls are cold, the chocolate immediately becomes hard. Keep the lollipops covered in the freezer or refrigerator.
